Broccolini Salad with Mango Salsa

If you want something light and fresh to eat, then try this recipe. It’s perfect for when you’re in a hurry because it only takes 15 minutes to make. Serves 6.


1 bunch trimmed asparagus, halved lengthways

2 bunches broccolini, trimmed and halved lengthways

60g baby rocket

1 peeled and thinly sliced avocado

1 small thinly sliced red onion

1/2 peeled and finely chopped mango

1 seeded and finely chopped long red chilli

1tbsp white wine vinegar

2tbsp olive oil

1tbsp finely chopped coriander


  • Blanche broccoli for two minutes in boiling water before adding the asparagus. Continue to blanche for a further two minutes before refreshing under cold water and draining.
  • Mix asparagus, broccoli, avocado, rocket and onion in a large serving bowl. Mix together the chilli, coriander, mango, oil and vinegar in a small bowl. Season to taste and spoon over the salad. Serve immediately and enjoy.
